Here’s the recipe for Tahchin with Chicken, a traditional and delicious Iranian dish:
Ingredients:

Rice: 3 cups

Chicken: 500 grams (preferably thighs or breasts)

Yogurt: 1 cup

Saffron (dissolved in water): 3 tablespoons

Eggs: 2

Onion: 1 large

Oil: as needed

Butter: 50 grams (optional)

Turmeric, salt, and pepper: to taste
Instructions:

Prepare the chicken:

First, cook the chicken with chopped onion, a little turmeric, salt, pepper, and water in a pot. Let it cook slowly. After it’s done, remove the chicken from the pot and shred it into smaller pieces.

Prepare the rice:

Soak the rice in water and salt for a few hours. Then, boil the rice in water until it’s partially cooked (slightly soft), then drain it.

Prepare the yogurt and egg mixture:

In a large bowl, beat the eggs. Add yogurt, dissolved saffron, and melted butter or oil, then mix well.

Combine the rice and chicken:

Add the partially cooked rice to the yogurt and egg mixture and stir gently to coat the rice.

In a non-stick pot, spread a little oil at the bottom, then layer half of the rice mixture on the bottom of the pot.

Add the shredded chicken on top of the rice and then cover it with the remaining rice, pressing it down gently.

Cook the Tahchin:

Cover the pot and cook on low heat for about 45 minutes to 1 hour, allowing the bottom to turn golden and crispy.

Once it’s done, carefully flip the pot over onto a plate and cut it into slices. You can garnish it with barberries, sliced pistachios, or almonds for extra flavor and decoration.
